Domaine Tour de Tilice
Planted on old apple orchards, south-facing and characterized by outcrops of schist, the vineyard of Domaine Tour de Tilice marks the third conversion of the Delforge family farm, following livestock farming and fruit growing (still present). The vineyard currently spans 7.5 hectares, and Simon Delforge, who has been in charge of the estate since 2016, made the unusual choice of blending traditional grape varieties (Chardonnay, Pinot Noir) with resistant varieties (Muscaris, Johanniter), while committing to a process of organic certification (finalised in 2021). The production focuses on sparkling wines.
"101"
The ‘101’ cuvée - which simply corresponds to the number of the farm - is dominated by the straightforwardness of the Johanniter, itself quickly ‘rounded off’ by the Muscaris and Chardonnay, making up 30% of the blend. The palate is supple and elegant, with aromas of white flowers, grapefruit and green apple.
