Custom Distillery

Behind this craft company is Pierre Gérard, former master distiller at Distillerie de Biercée, which he left when it was bought out. He now operates on his own, working with Les Grandes Distilleries de Charleroi for his creations. Several of the gins sold at Popsss bear Pierre Gérard's signature, including Cala Kumquat Gin, Gin de Binche and Maral. Today, Pierre Gérard is the king of customisation - hence the name of his company - and is determined to bring out the unexpected flavours of slightly crazy macerations and infusions.


Black Wood

Custom Distillery's first creation is Black Wood, a (Belgian) beer brandy infused with several types of wood, each with its own specific flavour: the spicy touches come from the use of French oak, the floral bouquet is provided by acacia wood, while the vanilla touch is generated by chestnut. The result is a distinctive spirit, with fruity and floral notes, and hints of gingerbread, cocoa and vanilla.
