Tour de Tilice
Planted on old apple orchards, south-facing and characterized by outcrops of schist, the vineyard of Domaine Tour de Tilice marks the third conversion of the Delforge family farm, following livestock farming and fruit growing (still present). The vineyard currently spans 7.5 hectares, and Simon Delforge, in charge of the estate, made the unusual choice of blending traditional grape varieties (Chardonnay, Pinot Noir) with resistant varieties (Muscaris, Johanniter), while committing to a process of organic certification. The production focuses on sparkling wines.
Osé
Partially matured in Belgian oak barrels, the Osé cuvée - an echo of the bold gamble of planting Chardonnay in this corner of Wallonia - is extremely well-balanced. It gives off aromas of caramelised apples, with lovely notes of brioche bread.
