Domaine du Chant d'Eole
Belgian Filip Remue had been running the Maison Remue-Gaspard in Champagne for over 25 years when he hit upon the not-so-ridiculous idea of duplicating his success in Quévy, in western Hainaut. A fortunate alliance with one of the main landowners in the area, the Ewbank family from Wespin, gave rise to the Domaine du Chant d'Eole – the Sound of Aeolus estate, a reference to the wind turbines overlooking the vineyard. From the tasting cellar (hyper-modern in concrete and raw timber) to the winery, ambition pervades the entire design. The fermenting cellar can hold the grapes harvested from 30 hectares of vines: a surface reached in 2021, and this is only the beginning...
Chant d'Eole Brut Rosé
The Chant d'Eole rosé cuvée, little sister of the Brut Blanc de Blancs, is also matured on slats for at least 18 months.
Salmon-pink robe. Fine, even bubbles.
Nose dominated by red fruit, with notes of rose petals.
Roundness in the attack phase. Fine balance between sweetness and acidity.
Besides the traditional aperitifs and desserts, try a spicy Thai dish such as beef salad with lemongrass.
