De Caybergh is located in Herk-de-Stad in Limburg and is owned by the Maris family. Eddy Maris, just retired, and his wife Marleen run the estate together with their two children, Stijn (IT specialist) and Katleen (chemist). The vineyard is limited to 1.1 hectares and produces about 3,200 bottles per year. As they love the Burgundian terroir, they have planted exclusively Chardonnay and Pinot Noir, of which they have carefully selected the clones and treat them with natural means. The estate takes its name from an old hamlet on the Keiberg hill at the highest point of Herk-de-Stad.
Chardonnay "Cuvée du maire"
We fell in love with this "cuvée du maire" (in French on the label), named after a burgomaster's grandfather: it is, without a doubt, one of the most elegant Chardonnays in Belgium. In their quest for the greatest possible authenticity, the Maris family favours fermentation with indigenous yeasts, carried out using a tank foot (for more information on this method, we refer you to this very interesting article published by Derenoncourt Conseils).
Vinification and maturation are carried out in oak barrels (with regular stirring of the lees). In total, the wine remained in contact with wood for 9 months.
Lemon yellow colour.
Complex nose dominated by lemon and banana, with mineral touches.
Very well balanced on the palate, with superb length. Hints of exotic fruits. This is a gourmet wine, made to be kept.
A perfect accompaniment to a dish in sauce, whether it is based on the land or the sea.
