Right at the very tip of Belgium, where the Flemish and the French rub shoulders and the slopes dream of being mountains, lies the spot where Martin Bacquaert has his roots and produces elegant, thoroughbred wines. His domain is called Entre-Deux-Monts – between two mountains – logically enough, since it nestles between Mont Rouge and Mont Noir, both firmly anchored on the French-Belgian border. Entre-Deux-Monts covers now eighteen hectares planted with Chardonnay, Pinot Gris, Pinot Noir, Auxerrois, Kerner (Riesling family) and Siegerrebe (Gewürztraminer family). In 2018, Martin Bacquaert planted new Acolon vines, which until then had been the sole prerogative of the Château Bon Baron in Wallonia.
No crushing, pressing in full bunches, low-temperature alcoholic fermentation for about one month, matured on fine lees in stainless steel tanks for six months (except 50% of Chardonnay matured in three-year barrels).
Pale yellow robe. Lovely brightness.
Nose dominated by aromas of peach, pear and exotic fruits, with a hint of citrus.
Fairly supple in the attack phase, very good aromatic persistence, well controlled acidity, slightly saline finish.
Fish in sauce or white meats, as preferred.
