Seductive - Concentrated
Unlike many new Belgian winemakers, Gérard Constant did not fall for a captivating building – in other words, for real estate - but began by investing in the purchase of 12 hectares of vines in Vinsobres, in the Drôme department, about thirty kilometres to the north of Châteauneuf-du-Pape. What’s more, these weren’t just any vines: they were from the Domaine Les Ausellons, considered in his time by Parker to be "one of the three best properties" of the appellation. Gérard Constant has now also acquired plots in the Cairanne appellation.
Vinsobres In Fine
An exceptional product that is only made in certain vintages and in limited quantities (around 2,000 bottles). Popsss is delighted to be able to offer you the 2011 cuvée but beware, our stock is limited!
In Fine comes from the oldest vines on the estate (50 years old on average), found at the top of the hill. Gérard Constant prefers long maceration periods (four weeks in the tank) and allows the malolactic fermentation - in casks - to begin naturally (without inoculation). With his oenologist, Philippe Cambie, the winemaker selects the three or four most promising casks and extends the maturing process to 18 months, with regular batonnage. If this "pampering" produces an exceptional result, the In Fine cuvée finally emerges. If not, too bad!
In Fine is kept in a cold room (12°C) for six to twelve months after bottling. This wine does not undergo fining and is only lightly filtered.
Deep garnet red. Regular wine legs.
Powerful nose combining violet, crème de cassis and cherry with hints of spices.
Very captivating on the palate as well, with a fine, long finish.
A "classic" jugged wild boar.
16-17°C. Decant 1 to 2h before tasting. Excellent ageing potential.
