Domaine du Chapitre
Despite the reluctance of their farmer parents, Guillaume and Bertrand Hautier decided to take over the family business in Baulers (Nivelles), but with a radical change of direction: in 2013, 6 hectares of vines (resistant grape varieties or PIWI) were planted around the farm, followed by plots of Chardonnay and Pinot Noir, planted on the (better ventilated) heights of the village. Fifty ares of Cabaret Noir were also planted. The Domaine du Chapitre now totals 14 hectares, cultivated using sustainable agriculture, without herbicides. The coat of arms that decorates its bottles is a reminder of the farm's historical affiliation with the Chapter of the Abbey of Sainte-Gertrude.
Cabaret Noir
The two brothers have planted a total of eight hybrid grape varieties: Solaris, Johanniter, Bronner, Helios in white; Regent, Rondo, Muscat Bleu and Cabaret Noir in red. The yield on the very small plot of Cabaret Noir is limited to 20 hl/ha. This micro-cuvée was aged in two-wine barrels for one year, after an initial 8 months in stainless steel tanks. The 2019 vintage is less full-bodied than the 2018 vintage which benefited from exceptional sunshine.
Medium ruby colour
Aromas of black cherries and plums, with hints of violets and juniper berries.
Chewy and well-structured (but less so than the 2018 vintage, which benefited from exceptional sunshine). Average length.
Best served with grilled red meat.
