We like the winemaker’s description of his beauty: "just sublime"….
Voluptuous - Well structured
What can you say about Damien Briard? A permanently-erupting volcano… his voice is strong, his opinions are strong, everything is strong. Château de la Dame Verte
To enliven his Dame Verte, Damien Briard harvests by hand and at night, then puts the whole grapes, grazed but not pressed, into the tank. Carbonic maceration lasting 21 days is followed by pressing, fermentation (with natural yeasts only) and malolactic fermentation. This cuvée is matured in casks for 11 months, with regular batonnage of the lees.
Notes of ripe red fruits with a hint of spices, toasted.
Complex and structured in the mouth.
A grilled entrecôte or a pheasant à la brabançonne (with bacon and chicory)
16-18°C. Decant one to two hours before tasting.
Not fined or filtered. Without added sulphites.
