Domaine Combe Blanche
The story of his life should read "teacher". But the call of the sun and the desire for something different were stronger than the rest, and Guy Vanlancker left rainy Belgium as soon as he had his diploma to establish his destiny in a superb vineyard in La Livinière, the first appellation village in the Languedoc (1999). Twelve hectares are under production, including eight in the AOC Minervois La Livinière and Minervois. His cellar, which lies right at the heart of the village, is surrounded by thick walls from old fortifications. With his son Ambroise, who now works with him, Guy Vanlancker has embarked upon an organic certification process for the vineyard (label expected for 2021).
This cuvée comes from the best soil to be found at La Combe Blanche, on the slopes of La Livinière, and is only produced in good years: there are just 3,300 bottles of this 2015 vintage.
Planted on fairly steep hillsides, the yield from these vines is small (25 to 35 hl/ha). The winemaker vinifies the plots and the grape varieties separately and gives preference to gentle techniques, such as pigeage or treading by foot. The blend spends 18 months in five-wine barrels.
Deep garnet red.
Very attractive nose with red and black fruits.
Voluptuous and silky on the palate; very balanced. Toasted flavour at the finish.
Tender roast beef or lamb cutlets, served with wild mushrooms.
