Domaine de la Douaix
The Douaix vineyard, which lies in Arcenant, in the Hautes Côtes de Nuits subregion, was established in 2006 by the Moustie family from Belgium. Assisted among the vines by Claude Bourguignon and with the vinification and maturing process by oenologist Pierre Milleman, Mark Moustie and his son Gilles produce an excellent Burgundy wine. They own plots in several appellations and apply the principles of organic farming, although they are not certified. The yields are limited to around 35 hl/ha.
Savigny-lès-Beaune "Dessus les Vermots"
Savigny-lès-Beaune is one of the communal appellations of the Côte de Beaune vineyards, located between Aloxe-Corton and Beaune. Its clay-limestone sub-soils are of the highest quality and enable the production of refined wines. "Dessus les Vermots" is one of the many climates of the appellation. The Moustie family cultivates 30 ares of Pinot Noir here.
The Pinot Noir is harvested by hand, then sorted in the vineyard and in the cellar. The grapes are 100% destemmed. Fermentation is carried out in concrete or stainless steel vats, after a cold maceration of 6 to 8 days in the hottest years. Only indigenous yeasts are used. Maturing lasts an average of 15 months (up to 50% new barrels for the communal appellations). This cuvée is bottled without fining or filtration.

Very expressive nose with aromas of crystallised red fruits (strawberries, red currants).
Full-bodied, fine tannins and an elegant finish.
Rabbit, duck or lamb. Hard cheeses.
