Domaine Poc a Poc
Established in Paziols, in Cathar country (Roussillon), Xavier Ponsart cultivates three hectares of vines split between several plots on clayey-limestone and schist soils. He works them by hand (using a brush cutter, a motorised cultivator and a horse on the steepest plots), with the aim of producing wines without artifice. The average age of the vines is 70 years old for both whites and reds (40 years for the Syrah). Yields vary between 8 and 18 hl/ha. Little by little (poc a poc in Catalan), this young Belgian is establishing his reputation as a winegrower without concession.
Un Poc Era
Like all natural sweet wines, Rivesaltes Grenat is obtained by mutage. This operation consists of stopping the action of the yeasts during fermentation by adding neutral alcohol to the vat in order to preserve some of the sugars naturally contained in the grape. Rivesaltes Grenat PDO wines are produced from a single grape variety: Grenache. The Grenaches de Poc a Poc are planted on hillside plots with limestone (greze) soil.
The grapes are hand-picked in small crates and sorted on the vine. Vinification by parcel after complete destemming. Two weeks of fermentation, without yeasting. Light pumping over without pigeage. Maturing in fibre vats.
Deep garnet colour. Beautiful tears.
Nose of black cherry.
Very intense fruit with a nice acidity. Very elegant.
With a chocolate dessert or a blue cheese. Or with nothing at all, to divinely prolong the evening.
14-15 °C. Some people nevertheless prefer to drink it a little cooler.
