Domaine de la Douaix
Located in Arcenant, in the Hautes Côtes de Nuits, Domaine de la Douaix was created in 2006 by the Moustie family, originally from Belgium. It is the source of the Douaix that gave its name to the estate. Assisted in the vineyard by Claude Bourguignon and, for the work of vinification and maturing, by the oenologist Pierre Milleman, Mark Moustie and his son Gilles produce excellent Burgundies. Owners of plots in several appellations, they are currently converting to organic farming. Yields are limited to about 35 hl/ha.
Hautes Côtes de Nuits "Le Clos des Fervelots"
The plot of Pinot Noir used to make this cuvée is nestled in a south-facing vineyard above the village of Arcenant. A thick layer of clay covering the mother rock raises the quality of the terroir to that of a Premier Cru of the Côte de Nuits.
The Pinot Noir is harvested by hand, then sorted in the vineyard and in the cellar. The grapes are 100% destemmed. Fermentation is carried out in concrete or stainless steel vats, after a cold maceration of 6 to 8 days in the hottest years. Only indigenous yeasts are used. Maturing lasts an average of 15 months (up to 30% new barrels for regional appellations such as the Hautes Côtes de Nuits). This cuvée is bottled without fining or filtration.

Very expressive nose with aromas of crystallised red fruits (strawberries, red currants).
Full-bodied, fine tannins and an elegant finish.
Rabbit, duck or lamb. Hard cheeses.
