You have to like fuchsia, violet and crushed strawberries to enter the monochromatic world of Château Castigno. This 32-hectare estate at the heart of the Saint-Chinian appellation, in Languedoc, is owned by a couple from West Flanders, Marc Verstraete and Tine Claeys, who bought it in 2007. They aimed very high from the outset: the estate was converted to organic methods and the star consultants Michel Tardieu and Philippe Cambie - who usually work in the Côtes-du-Rhône - provide their support during the vinification process. Maintaining their momentum, Marc and Tine have rehabilitated the village of Assignan, which was virtually deserted, to create a high-end holiday resort.
Secret des Dieux
Old Carignan vines (over 60 years) and plots of thirty-year-old Grenache and Syrah planted on sandstone and silt. Yield limited to 25 hl/ha. Harvesting by hand. The Carignan and the Syrah are matured in oak casks, while the Grenache ages in stainless steel tanks. This wine is not clarified (no fining or filtration).
Very intense, dark red robe.
Concentrated aromas of small black fruits and spices on the nose.
Generous in the mouth. Average hint of wood. Fine, long finish.
Pairs perfectly with leg of lamb studded with garlic.
